I made this side dish on a whim one night. I didn’t want to take the time to prep the cauliflower ‘rice’ for the recipe I usually make. Plus I had a bunch of brown rice already cooked in the fridge because I make large batches of it ahead of time. It made the perfect side dish for our blackened salmon and my only regret is I didn’t have enough for leftovers! The great thing about this recipe is you can really do everything to taste–if you want more lime–feel free to add it–or if you want less cilantro–take some out. It really is open for individual preference.
Cilantro-Lime Brown Rice
- 2 cups cooked brown rice
- 1/4 cup cilantro, chopped fine
- 1 lime
- salt to taste
- 1 TB olive oil
- If prepared ahead of time, reheat brown rice and mix in olive oil.
- Add cilantro and juice of one lime. Mix well.
- Salt to taste.
This cilantro-lime brown rice is delish–and though we do cook white rice in our house, over time, I’ve grown to prefer the taste of brown rice. Do you have a preference? Let us know in the comments below!
