Summers in Texas are hot. Not just hot, but H-O-T. After three years of living in Austin, this California girl still isn’t used to the humidity and relentless heat that summers bring. But the kids take it all in stride. They will ride their bikes, hunt for rolly pollies, push each other on the tire swing under our great big oak trees, as if it’s a cool, breezy day. They come running into the house with bright pink cheeks and sweat in their hair.
So to help cool the kids (and me!) down we made some yogurt fruit pops yesterday that are healthy and super easy to make. This is another recipe that they can help out with because it just requires pouring in the ingredients and mixing well. They will help lick the bowl clean which makes for easy cleanup.
Fruit & Yogurt Pops
1 cup plain greek yogurt
1 cup frozen berries (we’ve also made them using bananas and peaches)
2 TB honey
set of 4 popsicle molds (if you do not have a popsicle mold you can also use small paper cups, wooden sticks and aluminum foil)
1. Mix all ingredients in a medium sized bowl (if you prefer, you can blend all ingredients to a smooth consistency so the fruit isn’t ‘chunky’)
4. Remove popsicles by running molds under water for a few seconds
